Hi everyone. l was looking for a relatively simple, dry Indian vegetable dish last night (to go with saffron chicken from the freezer) and wanted something with sweet potato in it as I had some I wanted to use up. I didn't find anything but made Mamta's Bombay aloo recipe with sweet potatoes instead of regular potatoes (everything else was as per the recipe). It was really delicious, though I guess deeply unorthodox! Though sweet potato has a stronger flavour than potato it went really well with the onions, curry leaves and spices.
I thought I would mention it in case there are any other big sweet potato fans out there.

That is nice to hear Heather. This recipe will also work with many other vegetables, including non-root vegetables. It is impossible to write down each method/recipe using each different vegetable. So experiment with different vegetables, when you see something you like.
