I thought I had roasted my besan well, and after it cooled, I added the sugar. But when I tasted it, it was raw! I have TONNES of besan/ghee/sugar mix with raw besan... how do I sort this, and what do I do with it?? Thanks in advance!

Hello Vandana

Besan should have a special nutty/roasted smell when ready. It becomes slightly pinkish too. You can tell when your whole kitchen gets filled with this aroma.

However, if you add sugar before this, it may be difficult to rescue it. This has never happened to me, so I am only guessing; if you fry it now, the sugar will probably get chewy/burnt. What you can do is try frying a small portion of it some more and see if that works. If not, try baking a couple of laddoos in an oven, say 180C for about 10-15 minutes, keeping an eye on it. That might work. I have asked my sisters and SIL, who makes them all the time, to see if they have any suggestions.
