i was going to make your recipe for besan laddoo however when i started it, i noted that something was very odd (pls correct me if i am wrong). i think the ingredients and proportions of besan to ghee are reversed for what you have posted. the consistency for what is written is completely watery, i.e 500 g ghee to 250 g besan. is this an error or have i done something wrong?? looking over other standard recipes it is basically 2:1 besan to ghee and not the other way around .... (from what i've seen).

You are absolutely right, I am so sorry, the ingredients are wrong! I am not sure how I have done that. I have checked my notes and I phoned my mum in India, whose recipe it is and from whom I learnt to make laddoos. You have done nothing wrong, it is my recipe which has obviously mixed up amounts somehow. They are not reversed, even for 500 gm. besan, the ghee required would be only 300-350 gm. My mum doesn't do 2:1, just a little more ghee than 2:1. She always says that you make them as they should be, just a bit smaller, and you don't have to eat a lot ;-)!
I will suggest that you dry fry another 500 gm. besan and add to it. If you make 1 kg. worth of laddoos, they will be a lot. But bear in mind that they will last a long time in the fridge and freeze well too.
They The correct ingredients are
250 gm. gram flour or besan
150-175 gm. ghee or clarified butter
250 gm. castor sugar or boora
50-100 gm. nuts or mewa (almonds, cashew nuts, pistachio-any or all) adjust to taste

it was quite late on my side of the ocean when i wrote so i did not have a chance to get back to you with a follow-up once all was said and done. thank you for your quick reply and the corrected recipe :)
in spite of this oversight, all worked out well. in a way, i am happy it happened to me, someone who has made them before and realized something was wrong, rather than a "first timer" ? that surely would have been disasterous! in the end, i only used 125 ml/gr worth of ghee to make them as using 500 ml would have left me with enough laddoo to feed a village, LOL.
as i used the 2:1 ratio, i did need a bit more sugar (same weight as besan) i found. in any event, all worked out well and it yielded about 18 1 ?" laddoo for the 125 g/ml amount of ghee. i imagine your recipe will yield more. btw, i always use laddoo besan to make these and not the regular finer ground one (not sure if you mention the difference in your recipe). i find it makes a better product.
