When using Asafoetida - look at the name. "Foetid" isn't exactly attractive as a food descriptor. So, to make it edible, fry it for a second or two in HOT oil, otherwise it really stinks unpleasantly.
I don't think it's an essential component of most dishes, though I couldn't really imagine my "bombay potatoes" (aloo bhajee) without it.
Asafoetida also goes by the name of Hing. I find it useful in lentil dishes. It does make a difference.
kennyliza is right. asafoetida does make a difference while used in lentil based dishes.pakoras are good example. it does have an medicinal effect to nullify any side effect due to high protein content.

I got some and used it adlib in one curry but it really didn't seem to fit.. truth betold it was rather off putting.... Maybe I should have fried it off first as suggest above,.. ?
LOL! You did not put it in your curry without frying it in oil first, did you Steven? It smells BAD in it's raw form. You have to heat some oil first and add it to the oil, along with cumin/mustard seeds/carom seeds etc., whichever ones you are using. Or, add it to onions as you fry them, always in hot oil.

I got mine from the supermarket, it's Barts. unfortunately I have to throw it away as it is cut with wheat. I am now looking for pure asafoetida or cut with something else.
Try Spices of India (who are recomended by this site) they have it by "Natco" and their version contains
"Asafoetida Powder (Hing) - Ingredients: asafoetida, gum arabic, ground rice, turmeric. Ref: ISG023 "
