Did you keep strictly to the half hour's maceration time of the recipe? If you left the fruit too long in contact with the salt & sugar, that does have the effect of hardening it. That's why people make Strawberry preserves by layering strawberries with sugar, so the fruit stays intect, instead of becoming a mush, as happens if you cook the fruit first.
Given that Mamta has often made the recipe, that's the only problem I can think of.
