I have been using recipes from your site for around a year now and never actually left a message but I find your recipes incredible and once mastered far far superior to any shop or takeaway Indian food especially Mums chicken/lamb curry and your Chicken Biriyani all pure quality but anyway please could you help as I starting to cook Vegetable curries and was wondering do I need to part boil before adding to pan after the whole spice etc, I like Potatoes,Carrots Cauliflower. Any advice would be a great help.
Ps. I am cookin Chicken Biriyani, Bombay Aloo and a Mamtas Chicken curry on Saturday cant wait!

Hello Colin and welcome to the forums.
Don't think there is any hard and fast rules about precooking of veggies but you will find many vegetable curries on site and if the recipe doesn't say preboil don't. Some potato recipes do specify precooking but for things like carrots and cauliflower is should not be necessary and indeed would be detrimental as the veg would go to mush.

Yes makes sense, I suppose if you like bigger potatoes chunks in the curry it would be best to parboil or if not cut to even sizes with the other vegetable.

Mamta encourages us to experiment but I always follow the recipe as closely as possible (at least the first time.) After all if it ain't broken why try and fix it! Experimentation usually occurs when I am missing or can't find some ingredients!

I don't generally pre/par boil the vegetables before making a curry. If I do, then the recipe should mention it.
Winton, I have had that potato curry 3 times already since I arrived in India, it being Holi season! Tonight, I am having aaloo methi and Kadhi, both of which I love.
