one more question about nan dough... can we store the unused dough ? if I make the dough today and dont finish it, can I use the leftover dough tomorrow?

Yes you can. Store it in an airtight container/plastic box and keep it in the fridge. Allow it to come to room temperature next day, before you cook again.
