Here is a collection of marinades for meat, chicken, fish, vegetables and even Paneer Cheese that I use.

Ingredients

All marinade ingredients mixed together. If you like a smooth marinade, you can blend them together quickly.

Instructions

1.A Simple Marinade
2.2 tbs. vinegar
3.1 heaped tbs. finely grated fresh ginger
4.1 tbs. ground/finely grated/crushed garlic
5.1 1/2 tsp. salt, adjust to taste
6.1 tsp crushed pepper
7.Chinese Type Marinade
8.Cloves off a whole bulb of garlic, peeled and squeezed through a garlic press
9.2 tsp. salt
10.1 tbs. sherry
11.2-3 tbs. light Soya sauce
12.A good sprinkle of freshly ground black pepper
13.Coriander and Cumin Marinade
14.2 tbs. Olive oil
15.2 tbs. chopped coriander leaves
16.2 tbs. lime juice
17.1 tsp. roast cumin, coarsely ground
18.1 tsp. paprika
19.1 tsp crushed black pepper
20.2 cloves garlic, crushed/grated
21.1 tsp salt, adjust to taste
22.Dijon Mustard Marinade
23.2 tbs. whole grain Dijon mustard
24.4 cloves of garlic, crushed/grated
25.2 tbs. fresh or 1 tbs. dry Dill or a herb of choice
26.1 tbs. salt (adjust to taste)
27.2-3 tbs. lemon/lime juice or
28.2-3 tbs. olive or other oil
29.Ginger Marinade
30.1 tbs. grated root ginger
31.1 tbs. grated/crushed garlic
32.1 tbs. Garam Masala
33.Juice of a lemon or 2 tbs. vinegar
34.Salt to taste
35.Hot Marinade for Prawns or Fish or chicken 1, from John Young
36.2 tbs. light Soya sauce
37.3-4 tbs. hot chilli sauce like Encona or similar
38.1/2 cup tbs. tomato ketchup
39.A good sprinkle of freshly ground black pepper
40.1 tbs. sugar or honey
41.2 tbs. olive or sesame oil
42.Marinade for Prawns or Fish or chicken 2
43.2 cloves of garlic, peeled and crushed well
44.1/2 level tsp. turmeric powder
45.2-3 tbs. lemon juice
46.Salt to taste
47.1/2 tsp crushed red chillies
48.Marinade for Prawns or Fish or Chicken 3
49.4-6 cloves garlic, peeled and finely grated or crushed
50.A good sprinkling of salt and freshly ground black pepper
51.Juice of 1 lime
52.A little olive oil
53.Marinade for Prawn or Fish or Chicken 4:
54.3 tbs. fresh lemon juice or white wine vinegar
55.1 inch piece of ginger, peeled and grated finely
56.1-2 green chillies, chopped finely
57.4 large cloves of garlic, peeled and crushed or finely grated
58.A handful of coriander leaves, chopped finely
59.Salt to taste
60.2 tbs. olive or other oil
61.2 tbs. semolina (optional)
62.Marinade for vegetables, from Sichuan province in China
63.2 tbs. peanut oil
64.2 tbs. sesame oil
65.3-4 tbs. coriander powder
66.2 tsp. salt
67.1 tsp. chilli powder (adjust to taste)
68.3-4 tbs. white sesame seeds
69.1-2 tbs. light Soya sauce
70.Spicy Yoghurt marinade (Tikka Marinade for chicken or Meat)
71.1 small pot or 1 cup of natural yoghurt
72.Salt to taste
73.1 tbs. coriander powder
74.1 tbs. turmeric powder (optional)
75.1/2 tsp. or to taste, chilli powder
76.2 tsp. sweet paprika, for colour
77.3-4 cloves garlic, peeled and grated or ground
78.1 inch piece of ginger, peeled and finely grated or ground
79.1 small onion, peeled and grated
80.1 tsp. Garam Masala
81.2 tbs. cooking oil
82.Tandoori Masala Marinade:
83.3-4 cloves garlic, peeled
84.1 inch piece or 1 tbs. grated ginger, peeled
85.2 heaped tsp. of Garam Masala
86.Flesh of 1 lime or lemon, rind and pips removed
87.3-4 green or red chillies (less or more as desired), stalk removed
88.1/2 bunch fresh coriander leaves (optional)
89.A few strands of saffron (optional)
90.2 tbs. cooking oil
91.Salt to taste
92.1 tsp. paprika powder for colour (optional)
93.A small carton (150 ml.) of thick yoghurt1 tbs. plain flour
94.1 tsp. cumin seeds
95.blend everything together.
96.Tomato Ketchup Marinade
97.3-4 tbs. tomato ketchup
98.1 tbs. Worcestershire sauce
99.2 tbs. Soya sauce
100.2 tbs. American mustard paste or whole grain mustard or any other mild mustard paste
101.1 tsp. chillies, coarsely ground (optional) or Tabasco sauce or any chilli sauce of choice, adjust to your taste
102.A sprinkle of black pepper
103.Salt, only if marinade is not salty enough
