Oven Roasted Tomatoes

These are very simple to make and are quite delicious. You can serve them as a side dish to an Indian or Non-Indian meal, or as a sandwich filling. Serves 4

Ingredients

4 ripe tomatoes of good flavour
1 tsp. oregano or other herb of choice
2 cloves garlic, crushed (optional)
1 green chilli, thinly sliced
2 tbs. Olive Oil
Salt and freshly ground black pepper

Instructions

1.Preheat oven to 200˚C 400˚F or Gas Mark 5-6.
2.Slice the tomatoes in halves. Place cut side up in a large oven-proof dish or tray.
3.Sprinkle oregano, garlic, green chilli and salt and pepper on top
4.Drizzle with oil.
5.Bake in oven for 20 minutes or until the tomatoes halve softened and tops look slightly browned.
6.Serve hot.

Notes

If you do not have an oven, cook them in a nonstick pan, cut side down.
