
These are very simple to make and are quite delicious. You can serve them as a side dish to an Indian or Non-Indian meal, or as a sandwich filling. Serves 4
Ingredients
| | 4 ripe tomatoes of good flavour |
| | 1 tsp. oregano or other herb of choice |
| | 2 cloves garlic, crushed (optional) |
| | 1 green chilli, thinly sliced |
| | 2 tbs. Olive Oil |
| | Salt and freshly ground black pepper |
Instructions
| 1. | Preheat oven to 200˚C 400˚F or Gas Mark 5-6. |
| 2. | Slice the tomatoes in halves. Place cut side up in a large oven-proof dish or tray. |
| 3. | Sprinkle oregano, garlic, green chilli and salt and pepper on top |
| 4. | Drizzle with oil. |
| 5. | Bake in oven for 20 minutes or until the tomatoes halve softened and tops look slightly browned. |
| 6. | Serve hot. |
Notes
| | If you do not have an oven, cook them in a nonstick pan, cut side down. |
