This sauce was created because I was clearing out the fridge, before going on a holiday! There was a packet of green chillies, some garlic, ginger and a few roots of fresh turmeric in my vegetable tray. I decided to put them all together in a blender and came up the this tasty, hot sauce! Makes one small jar.
Ingredients
| | 15-20 green chillies, de-stalked |
| | 6-7 cloves garlic, peeled |
| | 2-3 inch piece of ginger root, roughly chopped |
| | 2 inch piece fresh turmeric root, peeled and roughly chopped |
| | 1/2 cup malt or other type of vinegar |
| | 2 tsp. rock salt or black salt (kala namak), adjust to taste |
Instructions
| 1. | Place everything in a blender and puree. Transfer to a jar and keep in the fridge. |
| 2. | You can make it in bulk and freeze in small jars. |
Notes
| | I always save my empty jam, spice, sauce jars. I wash them in dishwasher and they are always there for use, sooner or later. I also ask friends with children to collect a few baby food jars, very handy for freezing chutneys, storing spices, jams etc. |
