Nan Khaties are the well known, traditional biscuits from Punjab region of India. You can buy them ready-made everywhere in Northern India but nothing beats the taste of freshly made ones! They are quite easy to make at home too, so give them a try.
Ingredients
| | 1 cup clarified butter or ghee |
| | 1 1/4 cup castor (ground) sugar |
| | 1/2 cup self raising flour |
| | 2 cup plain white flour or maida |
| | 1/4 tsp. ground cardamoms (optional) |
| | 8-10 green pistachios, shredded |
Instructions
| 1. | Cream sugar and ghee together until white. |
| 2. | Add both flours and cardamoms and mix all ingredients together to make a well kneaded, soft dough. You can do this in a food processor. |
| 3. | Take 1 tbs. of mix at a time and roll into balls. |
| 4. | Flatten each ball slightly. Place on a lined baking tray and make a cross on top of each biscuit with a knife. |
| 5. | Bake in the centre of an oven heated to 160-170ºC or 325-350º F, until light golden. This takes approximately 25-30 minutes. Times in ovens vary so keep an eye on the biscuits. |
| 6. | Cool on a wire rack and store in biscuit tin or a jar. |
