Hot and Sour Courgette Soup

This is a simple and delicious, low fat soup. Courgettes vary in size, so adjust amount to requirement. You can use other vegetables to make this type of easy soup. Servings 4

Ingredients

  • 2 medium courgettes or a cup of other vegetables like broccoli, mushrooms, red pepper mix

  • A couple of small tomatoes, chopped/sliced ( or replace with 1 table spoon of fresh tamarind pulp

  • 1 full tsp. peeled and grated ginger root

  • 4 tea cups water (1 per person)

  • 2 vegetable stock cubes or 2 full tsp. stock granules. If you don't have stock, replace with salt, pepper and herbs of choice.

  • Juice of 1 lemon or lime (about 3-4 tsp. adjust to taste)

  • 2-3 tsp. hot chilli sauce. If you don’t have this, use chilli flakes or fresh chillies. You may need to add extra lemon juice

  • Salt and pepper to taste, if needed

  • A handful of Feta cheese for garnish

Instructions

  1. Place courgettes, tomatoes, ginger and water in a pan, bring to boil.

  2. Add stock cubes/granules, lemon juice, chilli sauce and simmer over medium heat, about five minutes, until courgettes are cooked.

  3. Adjust seasoning, adding salt and pepper, if needed.

  4. Divide into 4 bowls, crumble some feta cheese on top and serve hot on its own or with pieces of fresh bread/toast/pita bread.
