This is an Indian twist on vinaigrette dressing, one of my favourites and easy to make. Chat Masala can be bought ready made in packets from almost all Indian grocers. It is an extremely popular spice mix used by Indian all over the world. I have more vinegar than oil, unlike a standard vinaigrette where the ratio is approximately 3:1 for oil:vinaigrette. When dieting, you can reduce oil still further.

Ingredients

  • 1 to 1 1/2 cup good balsamic vinegar

  • 1/2 cups extra virgin olive oil.

  • 1-2 tsp. Chat Masala

  • Sea salt granules to taste

  • 1/2 tsp. chilli flakes or black pepper

  • Other ingredients that can be added: Various herbs like parsley, chives, chervil, coriander, dill or mixed herbs, finely chopped or 1 heaped tsp. of Dijon or other 'made' mustard or crushed garlic or lemon/lime zest.

  • Optional: 1/2 tsp. sugar or sweetener (not needed when using sweet vinegar)

Instructions

  1. To make, place dry ingredients in a jar, add vinegar and then oil and shake the jar well.

  2. Taste and adjust seasoning. Add sugar/sweetener if needed.
