Apricot and Raisin Oat Flapjacks

Flapjacks are Oatmeal bars, a type of chewy cakes, which are made in 100s of different combinations. Here I have used dry apricots and raisins, but you can use any dry fruit you want. Traditionally, they contain golden syrup, but I always make them with honey. You can adjust amount of fat/oil and sugar to your liking. |They are easy to make. Homemade ones are easy to make and are miles cheaper than shop bought bars. You can make them with muesli too. Makes approximately 24. Also see Oat, Fruit and Nut Flapjacks (bars) and Date Squares

Ingredients

  • 300 gm. rolled oats

  • 175 gm. soft butter/cooking oil for vegans

  • 100 gm. honey

  • 100 gm. brown sugar (you can reduce amount, but it will be less chewy)

  • 100 gm dry apricots, chopped into small chunks

  • 100 gm. raisins or sultanas

  • 7-8 inch/20 cm square, shallow dish, greased or lined with greaseproof paper

  • Oven temperature 180º C/350ºF/gas mark 4

Instructions

  1. Turn the oven on.

  2. Place oil/butter, honey and sugar in a pan and melt together on gentle heat, stirring from time to time. All the sugar should be dissolve.

  3. Add rolled oats, apricots and raisins and stir them in to mix evenly.

  4. Spread the mix on the prepared tray, pat gently to spread evenly.

  5. Bake in the centre of a pre-heated oven for 30-35 minutess.

  6. Allow to cool a little and cut into pieces of your choice, but leave them in the tin until cool.

  7. Separate the bars and store in an airtight box/tin.
