Poor Man's Parmesan Cheese Vegan Alternative

This is not a cheese and it doesn't taste like cheese but it is a lovely, alternative topping for pasta dishes! Try it and you might find you want it instead of cheese or as well as! Serves 8 people, but it depends on how much you want per helping.

Ingredients

  • 2 slices of fresh bread (I've used white, you could use wholemeal)

  • 1/4 tsp. salt

  • 1/4 tsp. black pepper

  • 2-3 tbsp. olive oil

  • 1 sprig of fresh rosemary (just the green leaves, take out the woody talk)

Instructions

  1. Place all the ingredients in a food processor and blitz until reduced to a rough crumb.

  2. Heat a frying pan on medium heat.

  3. Add crumbs to dry frying pan. Keep them moving about as they dry out and just starts to colour.

  4. Add the oil, keep stirring so that all the bread is coated. You might need a little more oil, but you don't want to have oil in the pan that hasn't been absorbed in by the bread. It is ready when it is a rich golden colour.

  5. Sprinkle over the served pasta dish or place in a bowl so people can help themselves

Notes

  • You can add other dry herbs to the mix (dried rosemary, maybe a little sage, thyme etc depending on what type of pasta dish its going over).
