Stuffed Onions with Cheese & Tomatoes

One day, I was making stuffed peppers and I had some stuffing left over. Wondering what to do with it, I spotted half an onion left over from an omelette I had made earlier. So I shelled it into 2 cups, filled them with remaining stuffing and baked them along with the peppers. They came out really tasty, something I will definitely make again. You can wrap them in a foil and cook them on a BBQ too.

You can stuff onion with a meat or fish or prawn filling too.Serves 4-6

Ingredients

  • 1 onion

  • Stuffing

  • 1 medium onion, finely chopped

  • 2 medium tomatoes, peeled and chopped

  • 1 tbsp. coriander leaves

  • 1 tbsp. chopped mint leaves (optional)

  • 1 stalk of celery, finely chopped

  • 150 gm. packet of mozzarella cheese or cheddar cheese, grated or crumbled

  • Salt and pepper to taste

  • 1 tsp. chilli flakes (optional

  • 1 tsp. roasted cumin seeds (optional)

  • 2-3 tbsp. olive oil

Instructions

  1. Preheat the oven to 200C 400 F.

  2. Peel onion, cut in half and then split each half into 3 shells of about 2 layer thickness each.

  3. Mix all stuffing ingredients in a bowl, adjust seasoning.

  4. Fill in 1/6th of the filling in each shell. Place all onions on a lined oven tray.

  5. Drizzle olive oil over them.

  6. Bake in hot oven for 25-30 minutes, until cooked.

  7. Serve hot.

Notes

  • Stuffed onions can be wrapped in aluminium foil parcels singly and cooked on a BBQ.
