Swede (and Carrot) Mash

Swede is a root vegetable that looks a lot like a large turnip and it is very much underused in my opinion. It's flesh turn yellow when cooked. I love it as mash, either on its own or with carrots/potatoes/onions etc. It can be made into soup, curry, chips, roasted and added to salads and stews. Serves 4

Ingredients

  • 1 swede, peeled and cut into 2 inch square pieces

  • 2 carrots (optional), peeled and chopped in large chunks

  • 1 inch blob of butter

  • A good sprinkle of salt (remember butter has some salt too)

  • A good sprinkle of freshly ground, coarse black pepper

Instructions

  1. Place the swede/carrots in a microwave steamer and cook on fool for 6 minutes. If not soft enough, cook for further 2-3 minutes. You can boil them in a pan salted water until tender, about 15 minutes of brisk boiling.

  2. Drain and return to pan or to a bowl.

  3. Add butter, salt and pepper and mash with a potato masher. I like them ‘not too smooth’. Adjust seasoning and serve hot.

  4. You can also add finely chopped coriander leaves or other herbs of choice.
