Mixed Salad with Cheese

Mixed salad can be served as light lunch on its own, if you mix some grated cheese in it. Serve with a bowl of freshly made soup and a thick slice of fresh bread. Serves 2

Ingredients

  • For the salad

  • 1 yellow or red pepper, de-seeded and chopped coarsely

  • 6 inch cucumber

  • 1 firm, ripe tomato, de-seeded and finely chopped or sliced or use a handful of cherry tomatoes

  • A few leaves of lettuce of choice, shredded. A few leaves of rocket salad/mint/basil/chives give it an extra flavour.

  • 1/2 red onion or a couple of spring onions, thinly sliced or chopped (optional)

  • 1 cup coarsely grated mature Cheddar cheese or Stilton or Mozzarella or cubes of Feta or any other cheese of choice.

  • Other ingredients that can be used in any combination are;

  • A chopped Avocado pear

  • Dessert apple, diced. Do not peel, skin gives colour to the salad. Sprinkle lemon juice as soon as you have diced it, to stop discolouration.

  • A few orange or grapefruit segments, de-seeded and peeled

  • A few pickled olives

  • 1-2 green chillies finely chopped

  • A few grapes

  • Dressing. You can add any Salad Dressings of choice, including a mayonnaise, but I usually make a fresh vinaigrette:

  • 3-4 tbsp. wine vinegar or light balsamic vinegar,

  • 1 tbsp. extra virgin olive oil

  • Salt to taste (1/2 tsp.)

  • Freshly ground black pepper to taste (1/2 tsp.)

  • 1 tbsp. of any of the herbs like parsley, chives, chervil, coriander, dill, finely

  • 1 tsp. roasted and crushed cumin seeds (optional)

Instructions

  1. Place all salad ingredients in a bowl and mix gently.

  2. Place dressing ingredients in a small jar and shake vigorously.

  3. Pour the dressing over salad just before serving and mix gently but thoroughly.

  4. Serve chilled.
