Red Cabbage and Mixed Green/RedYellow/Orange Pepper (Capsicum/Bell Pepper) Salad

Salads can be made with whatever ingredients (salads/vegetables) you have in your fridge drawer. This one is made with a red cabbage, but you can use a firm white cabbage instead. I had some red/yellow peppers in the fridge and my daughter gave me a freshly picked green pepper from her garden, so that is what I used. You can add 1 thinly sliced/chopped red onion too. Serves 6

Ingredients

  • For the salad:

  • 1/2 red cabbage, washed and finely & evenly shredded

  • 1 green pepper, de-seeded & finely sliced

  • 1 red pepper, de-seeded & finely sliced

  • 1 yellow pepper, de-seeded & finely sliced

  • 1 green chilli, stalk removed and finely chopped (I leave the seeds in)

  • Dressing:

  • 2 tbsp. olive oil

  • 1-2 tbsp. white balsamic or any other nice vinegar

  • Juice of 1/2 a lemon, adjust to taste

  • 1 heaped tbsp. whole grain ‘made’ mustard If you don’t have this, use coarsely ground black mustard seeds.

  • 1 tsp. white sesame seeds, lightly roasted (1 1/2-2 minutes in a microwave)

  • A good sprinkle of freshly ground black pepper

  • 1 tsp. rock salt, adjusted to taste

  • 1/4 tsp. coarse chilli flakes (optional) or 1 fresh green chilli, finely chopped

  • 1 tsp. sugar (optional)

  • You can add a few raisins too

Instructions

  1. Place the cabbage peppers & green chillies in a salad bowl.

  2. Place all dressing ingredients in a jar, close lid and shake vigorously.

  3. Pour over salad, mixed gently and leave covered in the fridge until you are ready to serve.
