Spanakopitta 1, Spinach and Feta Cheese Parcels

I have always loved these small parcels of Feta Cheese and Spinach mix in Puff pastry. See Spanakopitta 2. They are often made as closed parcels, but I saw them folded like an envelop with an open top (see picture), and decided to make them this way. I have also eaten them made in Filo pastry, as tiny mouthfuls, snack sized parcels, served with drinks.

You can try making them with Filo Pastry too. I buy the pastry ready-made, saves a lot of effort! I have seen these parcels made with roasted vegetables and Feta cheese and even with meat, instead of spinach and Feta.

Ingredients

  • 1 large packet (600 gm.) of spinach leaves (100 gm. frozen or cooked)

  • 1 medium onion (150 gm.), peeled and chopped

  • 2 tbsp. vegetable oil

  • 1 tbsp. chopped fresh oregano or 1/4 tsp. dry oregano

  • 1 tbsp. plain flour

  • 100 gm. feta cheese, grated or crumbled

  • 2 eggs, lightly beaten

  • Salt and pepper to taste

  • 250 gm. packet of ready made Puff Pastry or make your own

  • 1 tbsp. melted butter

Instructions

  1. Cook spinach leaves; either boil them with 1/4 cup of water, until soft or microwave on full, with 1 tbs. water, for 4 minutes. Drain, cool and squeeze as much water out as possible. For a successful outcome, spinach leaves must be almost dry. Any water left in it will spoil the pastry.

  2. Heat oil in a pan and fry onions until softened.

  3. Add boiled spinach, flour and oregano, stir fry for 10 minutes, until the mix looks completely dry. No water should remain. Turn heat off. Transfer to a bowl. Allow to cool.

  4. Add feta cheese, salt, pepper and beaten eggs. Mix well.

  5. Roll out puff pastry to 12 inch or 30 cm. square. You may need to dust it with a little dry flour. Cut into 2x2 inch/5x5 centimetre squares.

  6. Now roll out each square into a 4x4 inch/10x10 centimetre square.

  7. Place 1 tbsp. of spinach-cheese mix in the centre of each square. Lift and fold 4 corners to the centre, like a envelop.

  8. Seal the edges from centre out, leaving about 1 centimetre unsealed at the lower end of each edge. This will allow the steam to escape during cooking. See picture.

  9. Place all parcels on a greased baking tray and bake in the centre of a preheated oven for 25-30 minutes or until golden.

Notes

  • This spinach and feta cheese mix can also be used on jacket potatoes.

  • Puff pastry is quite difficult to get right. So if you can get ready made one, do not waste time on making it at home.
