Tomato and Basil Salad

This is an extremely quick, yet refreshing salad to make.

Ingredients

  • 1 firm, ripe tomato per person

  • A sprinkle of freshly ground rock salt

  • A sprinkle of freshly ground black pepper

  • A handful of fresh basil (tulsi) leaves or a few onion chives

  • A little extra virgin olive oil

Instructions

  1. Cut tomatoes into wedges or slices and place in a bowl or plate.

  2. Add a handful of basil leaves or finely chopped chives.

  3. Sprinkle salt and pepper.

  4. Serve with a drizzle of olive oil.
