Peanut Sweet Balls or Laddoo

In India, laddoos come in many varieties. These particular ones are from Gujrat and have quite a unique flavour.

Ingredients

  • 1 kg. skinless, uncooked and unsalted peanuts

  • 2-3 tbs. ghee or clarified butter

  • 3-4 tbs. dry ginger powder or sonth

  • 3-4 tsp. cardamom (green illaichi) powder

  • 600 gm icing sugar

Instructions

  1. Place peanuts in a tray and dry roast them in a warm oven, at 150º C or 300 Fº, for 2 hours.

  2. Cool.

  3. Grind coarsely in a food processor.

  4. Place in a large bowl.

  5. Mix all other ingredients thoroughly.

  6. Making laddoos:

  7. Take approximately 1-2 tbs. of the prepared mix in one hand.

  8. Squeeze and roll it between the palm and fingers of that hand, to make it into small but firm ball. Squeezing is necessary to make the laddoo compact enough to hold together. Continue until all laddoos are made.

  9. Place on a tray until completely cool.

  10. Store in an air tight boxes.
