This South Indian Curry Powder is a hot and fiery spice mix from South India, which is used to spice up various dals (lentils), as well as sambhar.

Ingredients

  • 1 tbs. oil

  • 2 tea cups whole red chillies

  • 200 gm. coriander seeds

  • 50 gm. cumin seeds

  • 1 1/2 tbs. fenugreek seeds

  • 1 1/2 tbs. mustard seeds

  • 1 1/2 tbs. black pepper corns

  • 2 tsp. Bengal gram or chana dal, skinless

  • 2 tsp. urad/urid/urd dal

  • 2 inch piece of cinnamon stick

  • 10-12 curry leaves (not bay leaves)

  • 1-2 tsp. poppy seeds

  • 2 tsp. turmeric powder

Instructions

  1. Heat the oil in a frying pan.

  2. Fry red chillies for a few minutes and keep aside.

  3. Roast/ dry fry (without oil) all other ingredients, except turmeric, in the same pan.

  4. Allow to cool.

  5. Grind everything together to a powder, mix in turmeric powder and store in an airtight jar.
