Smoked Haddock Salad

This is a simple and quick dish to make. It can also be used as a sandwich filling.

Serves 2

Ingredients

  • 1 fillet of smoked haddock, skin removed and flesh flaked

  • 1/2 red onion, peeled and chopped finely

  • 1 medium tomato, cut into half, deseeded and chopped into small pieces

  • 1/2 tsp. freshly ground black pepper

  • Dressing. (You can use any Dressings of choice):

  • 2-3 tbsp. wine vinegar or any other good vinegar or juice of one lime (if using lime, add fine zest as well)

  • 1/3 tsp. salt

  • 1 tsp. wholegrain mustard

  • 1/2 tbsp. whole 1 tsp. olive oil of good quality(there is enough oil in the fish)

  • Herbs of choice, like, chives, coriander, dill

Instructions

  1. Place fish, onion, tomatoes in a bowl, add black pepper and mix well, gently, without breaking the fish too much.

  2. Place all dressing ingredients in a jar, close lid and give a good shake, to mix all ingredients well.

  3. Add to fish, mix and serve with freshly baked bread or toasted Pita bread or Nan.
