Banana Sweet Yoghurt With Honey And Coconut

Use sweetener for diabetics. It can be served as a dessert.

Ingredients

  • 2 ripe bananas, medium sized, peeled and cut into bite size pieces

  • 1 tsp. lemon juice

  • 1 cup plain yoghurt

  • 1-2 tbsp. honey (you can use sugar or a sugar free sweetener)

  • 1/2 cup desiccated coconut, unsweetened (fresh coconut is always better

Instructions

  1. Roast/dry fry coconut in a small pan or in a microwave, until a nice aroma rises and it changes colour to slightly brownish pink. You can toast the coconut in a microwave. Spread on a plate and cook on full for 3 (2+1) minutes. Keep aside.

  2. Squeeze a little lemon juice over bananas, to keep them from discolouring.

  3. Mix yoghurt with honey and half the coconut.

  4. Add bananas and stir lightly.

  5. Garnish with remaining coconut.

  6. Serve chilled.
